Watermelon, Strawberry and Meyer Lemon Smoothie

3 cups sweet watermelon (seeds removed)
1/3 cup Meyer lemon juice (freshly squeezed)
1/2 cup fresh sweet strawberries (halved)
1 tablespoon raw honey
1/3 cup apple juice
1/3 cup crushed ice
2-3 shots of lemon infused vodka (optional)

In a high-powered blender, combine all ingredients. Blend until fully combined and serve in a chilled glass with fresh watermelon and lemon circles on the rim.
