15th annual Portland Jerk Festival

‘Next Food Network Star’ Finalist Inspires to Live Healthy

He’s been in the company of celebrity chefs like Alton Brown, Guy Fieri and Giada De Laurentiis. And now chef Judson Todd Allen, a former finalist on the “The Next Food Network Star,” will grace Naperville Public Library with his wide smiles, delicious eats and healthy tips.

Recognized as the bow tie-wearing, stylish chef who shed more than 100 pounds by cooking healthy, Allen will be the special guest speaker during the library’s Healthy, Wealthy & Wise celebration from 6:30 to 8:30 p.m. Jan. 27 at 95th Street Library, 3015 Cedar Glade Drive. Along with offering food samples of his salsa, Allen also will share his personal journey of losing weight.

The Chicago native founded Healthy Infused Cuisine, a Chicago-based company that provides healthy, gourmet cuisine through meal delivery, personal chef services and catering. Along with the Food Network, Allen has appeared on the “Steve Harvey Show” and a variety of local news programs.

American Celebrity Chef treats special needs children

While embarking on a culinary tour of Jamaica, American celebrity chef Judson Todd Allen shared his healthy creations with the children of the Early Stimulation Plus Childhood Development Centre during a lunch time treat on Monday, September 22, 2014.

Held at the centre’s East Kingston base, the chef treated over 100 Special Needs students to vegetarian wraps. Chef Judson is CEO and Executive Chef of Healthy Infused Cuisine, a premium cuisine company that provides customized personal and event services for clients who desire healthier food choices. The chef is a former season eight finalist of popular American reality show ‘Food Network Star’ and has catered for the likes of TV host Steve Harvey and broadcast network NBC.

Chef Judson emphasizes philanthropy in his work and contributes his time and resources to organizations such as Reed For Hope and the Jamie Foxx Foundation. He is currently in the island as part of the launch of The Melting Pot Movement introduced by Jamaican Kesi Gibson. The movement, which is based in New York, is a social impact initiative of Gibson’s fashion house Kyu Melange.

Gibson is filming Chef Judson’s tour for a culinary documentary that will be submitted for consideration to a number of film festivals. What were your first impressions of Kingston?

It was definitely a surprise for me because I expected these white sandy beaches and exotic fruit trees to greet me as I got off the plane; however, it felt more metro-like. My immediate feeling was that Kingston was going to offer a colourful experience that some of the more tourist locations could not deliver on. Oh yes, my stomach immediately began growling as all I could think about was stopping to grab some “street food” that smelled so good!!

What was the most memorable meal you enjoyed in Kingston?

The most memorable meal I had was my very first gastronomic experience on the island. Nestled in the chaotic maze of Hellshire Beach was Screechie’s, known for their Pumpkin Stew Fish, this creamy and hearty bowl of stew studded with just the right amount of spices gave me everything. But the ultimate foodgasmic experience came from the Fried Fish with Escoveitch and the Festival. It’s something about the vinegar and spicy Scotch bonnet escoveitch with the crispy yet succulent piece of fish that sent me into a sublime state!
