
Greek Inspired Stuffed Turkey Burgers

1 lb ground turkey
1/2 cup crumbled feta cheese
1/4 cup Kalmata olives, chopped
1 teaspoon olive oil
1/3 cup sun-dried tomatoes, chopped
1 small red onion, sliced
1 tomato
4 brioche rolls
1 egg
2 Tablespoon dried oregano
1/2 cup rice wine vinegar
2 teaspoon Italian seasoning
1 Tablespoon fresh parsley
1 Tablespoon fresh mint
1 teaspoon sriracha sauce
1 teaspoon onion powder
1/2 teaspoon garlic, chopped
1/3 cup tzatziki sauce
ground black pepper, to taste -
In a large mixing bowl combine your ground turkey, olive oil, seasoning, herbs, sriracha hot sauce, and garlic. Add your egg to the mixture (acts as a binding agent). Combine all ingredients until well incorporated.
To stuff the patties take about 2-3 ounces of well seasoned meat and create a patty. In the center, place your feta and sun-dried tomatoes. Take another 2-3 ounces, form another patty to place on top of the stuffed burger. Seal the edges and round out to form a perfect burger. Repeat these steps for all burgers.
In a separate bowl add your vinegar, olive oil, and oregano and Italian seasoning. Combine and add your thinly sliced onions and chopped olives. Let this sit overnight to soak up the flavor.
You can grill the burgers or cook them on the stove top over medium high heat (you want to see a pale liquid extract from the burgers to make sure they are completely done).
Serve on a nice pretzel roll, topped with tzatziki sauce, marinated onion and olives and tomato slices.
