An appetizer surely to please any guest at your party, this southwestern eggroll recipe will send you into a state of sublime. The Morning Star Farms – Spicy Black Bean Burger, is perfect to add to a flour tortilla along with slices of avocado, jalapeno jack cheese, lime infused spinach and roasted red peppers and baked until crispy and golden. Serve with your favorite creamy dipping sauce.
Spicy Black Bean and Avocado Southwestern Eggrolls

1 package (4 patties) Spicy Black Bean Burger by Morning Star Farms, thawed
2 tablespoons frozen chopped spinach, thawed and squeezed dry
1 egg, beaten
3/4 cup jalapeno jack cheese
1 green onions, diced
1 tablespoon roasted red peppers, diced
1 tablespoon Judson Todd Allen CHEF BLEND Hot Sauce
1 tablespoon chili powder
½ teaspoon cumin
½ lime, juice and zest
1 tablespoon fresh parsley, finely chopped
1 tablespoon grape seed oil
8 seven inch flour tortillas
sea salt to taste
Preheat oven to 400 degrees F.
In a large bowl, add thawed Morning Star Farms, Spicy Black Bean Burgers and mash using hands. Combine all ingredients: spinach, cheese, onions, peppers, hot sauce, spices, lime juice, lime zest and parsley.
Beat 1 egg in a small dish and set aside.
Wrap tortillas in a moist paper towel and microwave for approximately 20 seconds or until pliable. Place tortilla on a flat surface and add even amounts of filling into the center of each tortilla (do not over stuff).
Brush egg wash on the outer sides of the tortilla and fold ends and roll tightly. Make sure all sides are completely adhered (no breaks, cuts or open pockets).
Repeat steps until all eggrolls have been formed.
Oil all sides of the egg rolls and place them on an oiled baking sheet. Bake for approximately 25 minutes or until golden brown and crispy.
Serve with your favorite creamy dipping sauce.
