Grilled Sweet & Spicy Chicken Skewers with a Charred Scallion, Ginger & Garlic Relish

Cooking Instructions
  • Chicken

    1 lb. boneless skinless chicken thighs, cleaned & cut into strips for skewers

    2 tablespoons honey

    2 tablespoons olive oil

    2 tablespoons of sambal oelek

    1 1/2 teaspoon of Sriracha

    1/4 cup lime juice

    1 tablespoon rice vinegar

    1 teaspoon garlic, minced


    8 scallions, grilled and charred

    1 serrano chile, sliced

    1 tablespoon garlic, finely chopped

    1 tablespoon ginger, minced

    1 teaspoon brown sugar

    1/4 cup low-sodium soy sauce

    1 tablespoon lime juice

    1 teaspoon sesame seeds

  • Set your grill (charcoal or gas) to the appropriate temperature – approximately 400 degrees.

    Combine honey, 1 tablespoon of oil, sambal, Sriracha, lime juice, garlic and vinegar in a mixing bowl. Make sure to reserve some to pour over your cooked chicken for after grilling. Add chicken strips and let sit in the refrigerator for a least 20 minutes to marinate.

    Skewer chicken and grill until completely cooked through and moist. Depending on your method of grilling, the chicken takes about 10 minutes on each side.

    To prepare the relish, combine all ingredients and whisk until fully incorporated. Plate grilled chicken skewers on a plate and pour both the reserved marinade and relish on the chicken. Garnish with additional sesame seeds.
