Highlighting the Morning Star Farms – Roasted Garlic & Quinoa Burger, this product is combined with roasted sweet potato, scallions and a blend of Cajun spices to create a guiltless pleasure. These fritters can be served with a remoulade sauce and pair perfectly with a spinach or kale salad.

Roasted Garlic & Quinoa Fritters

1 package (4 patties) Roasted Garlic & Quinoa Burger by
Morning Star Farms, thawed½ cup sweet potato, mashed
1 large egg
2 tablespoons scallions, chopped
1 teaspoon honey
1 tablespoon flour
6 cups grape seed oil
1 tablespoon Judson Todd Allen CHEF BLEND Hot Sauce
1 teaspoon Cajun spice blend
1 teaspoon fresh lemon juice
1 tablespoon fresh parsley, finely chopped
1 pinch sea salt

Preheat oven to 375 degrees F.
Peel and cut sweet potato into medium cubes. Oil a baking sheet with 1 teaspoon grape seed oil. Fully incorporate oil with potatoes. Drizzle with honey and season with sea salt. Roast for approximately 35 minutes or until soft and caramelized. Cool and mash potatoes.
To a large mixing bowl add thawed Morning Star Farms, Roasted Garlic & Quinoa Burgers, mashed sweet potatoes, egg, scallion, hot sauce, spices, lemon and parsley.
Using your hands or a wooden spoon, mix ingredients until fully combined. Consistency should be similar to a soft dough
In a deep cast iron pot, preheat oil for frying to 350 degrees F. Using an ice cream scoop, portion fritter batter into medium size balls. Drop into oil and cook for about 4-5 minutes or until golden brown in color and crispy.
